Local: Thimble Island Oyster Co. is a small, locally owned 60 acre farm nestled in the Thimble Islands of Long Island Sound. Unlike much of our food these days, when you eat our locally grown oysters you know where they came from and who’s growing them! Click here to meet Brendan, your local oysterman.

We’re proud to have created the first CSF in Long Island Sound. Modeled on land-based CSAs, we’ve created a way for local residents to eat local, help restore the shoreline’s ocean ecosystem, and support local shellfish farmers. Click here to learn more.

Oysters: We cultivate deep water Thimble Island Oysters. We guarantee that our oysters are harvested the same day they go to market, ensuring our customers the freshest and highest quality shellfish available. Our harvesting process is both FDA and USDA certified and adheres to the highest of food quality standards.

Seaweed: Thimble Island Oyster Co. is pioneering the development of sustainable ocean mariculture – the farming of native aquatic plants and other seafood in salt water. Working with Dr. Charles Yarish of UCONN and Bun Lai of Miya’s Sushi, we’re in the process of setting up a growout system to cultivate seaweed and mussels on suspended longlines above our existing oyster and clam bottom cages. Sustainable: As “green fishermen” and proud members of the emerging green economy, we confine our oyster sales to within 100 miles of our farm in order to limit transportation-based carbon emissions. We use no chemicals, irradiation processing, or GMOs; we designed our own solar refrigeration system; and we use only recycled cages and other growing gear. And our oysters are grown in deep water cages that function as artificial reefs for striped bass and other fish native to Long Island Sound. Read more here…
